Pandan is a relatively new discovery of mine. My fiancé is half Malaysian and has introduced me to a whole new world of amazing and delicious food. If you aren't familiar with Pandan it's a tropical plant used quite frequently in Southeast Asian cuisine. It's also very hard to describe the flavour so you'll just have to try it! One of my favourite cooking blogs Raspberri Cupcakes is run by Steph, a Malaysian foodie from Sydney. She often puts up Malaysian inspired desserts, such as the pandan lamingtons I made last weekend. I was so inspired by this recipe I decided to have my own little experiment. There is a Malaysian dessert called Kuih Ketayap which is a pandan crepe filled with a coconut and palm sugar mix. It's so delicious!
So here are my mini pandan cupcakes with palm sugar frosting and toasted coconut! Yum!
